Happy Friday!
According to the Huffington Post, its National Margarita Day on Feb 22nd. I guess we are just in time! Debbie and I will happily celebrate a day dedicated to Margaritas. Any other takers?
I have been sick all dang week and I am finally starting to come around. I hate being sick. It throws off my workout routine and my healthy eating resolve. I am not one of those people that doesn’t feel like eating when I’m sick. I don’t feel like eating much, but I want comfort food. I want melted cheese and no broccoli. That’s when its time to make soup! Good thing I’m getting over this bug in time for the weekend! I will likely feel good enough to have one of these 😉 and its going to be sunny. Maybe not warm, but sunny.
Debbie and I are loving the blood oranges right now. The pretty pink color in this beauty and in our last cocktail post, the Blood Orange Martini, are hard to resist.
Fresh squeezed blood oranges and pineapple juice make this margarita taste like a glass of pink sunshine. The sweetness of the fruit juices spiked with the slight bite of tequila brings us back to pool parties and camping trips from the summer. And Vegas…. Margaritaville!
One of my favorite fruits ever is pineapple. Its so sweet and juicy with a slight tang. Perfect for a cocktail. In this margarita, its just blended right up so if you don’t like the pulp so much you can blend the pineapple first and then strain it and use the juice. The pulp isn’t really too noticeable anyways especially since this is a blended margarita. You could also use pineapple juice from a container, but fresh is always so much better!
Speaking of Vegas, were going! Mark and Debbie, Kevin and I, and our great friends Bob and Mandy. We are classing it up at the Bellagio for a weekend this April. April is the perfect month as the temperature is in the high-20’s or even 30, the pools are all open and its still raining at home. We cant wait! But that means that we have 8 weeks before we leave so once again, its crunch time. Time to eat properly and work the hell out! No time for being sick…

Ingredients
- 4 oz tequila
- 2 oz triple sec
- 5 blood oranges
- 1/2 pineapple
- 1 lime
- 5 cup ice
- lime wedges for garnish
- coarse salt for the rim
Instructions
- Add the tequila and triple sec to a blender.
- Squeeze the juice from the oranges and the lime into the blender.
- Peel the pineapple and cut it into chunks. Add to the blender.
- Add the ice and blend well.
- Run a lime wedge around the edge of your glass. Dip the rim in the salt.
- Fill your glass with the blended margarita and enjoy!
