Pink Prosecco Raspberry Mojito to get You Thinking of Summer Again

This pink prosecco raspberry mojito is simply and deliciously made with fresh raspberry and peach juices, lime, rum, mint and prosecco. Juicy, bubbly, and refreshing!

Nothing gets Debbie and I feeling like summer than a mojito.  Except for maybe a margarita…  Or a bellini…  Or sangria…  Ok fine, pretty much any cocktail is best when consumed sitting in the hot sun of summer.   But the freshness of the mint, the juiciness of the peaches and raspberries, and the bubbles in this pink prosecco raspberry mojito really does the trick any time of year.

And we so need it right now!  Where we live, summer is long gone.  We have had crazy rain and wind this week, traffic is nuts and branches and trees are down here and there.  A tree even blocked the highway on my commute to work this week!  Apparently we are in for a long cold crazy winter again so Ill take all the summer that I can get.  Liquid or otherwise!

We made this raspberry mojito in a pitcher so you can easily make a few at a time.  That is going to serve me well when I can’t deal with the rain anymore this winter lol.   This full recipe will make 4 – 6 cocktails depending on how much ice you put in each glass :).  We will give you an option in the recipe below if you are only making one or two at a time though.

We used fresh juice that we made ourselves for this recipe.  If you can find some good raspberry juice that’s not from concentrate then I think that would work too, and peach nectar that’s not from concentrate would work as well.   But you may have to use a bit of sweetener as we added sugar to our juice.  It doesn’t take that long to make your own though and you can make it with frozen fruit.  You can freeze the extra juice that is not needed for this pink prosecco cocktail or just make more cocktails!

It’s easy to make.  Add the fruit and sugar to a pot, heat till bubbly and broken down, then strain.  Done!

Isn’t the color of that pink prosecco cocktail beautiful!  I just love how naturally pink it is!  So summer and feminine 🙂

When making any mojito the key is to really muddle that mint.  Its even more so important in this raspberry mojito because of the competing fruit flavors and the bubbles from the prosecco.  Really get in there and muddle it and don’t be afraid to use lots of mint!

All muddlers are not created equal.  Look for one with a wide bottom, and one with knobby bits on the bottom so you can pound and twist the mint in submission easily!  It also helps to have a longer one when you are using it in a pitcher.

Useful tools for making this Pink Prosecco Raspberry Mojito:

  1. Muddler – in case you missed the paragraph above, this one is a necessity!
  2. A good pitcher – this one has a really nice pouring spout and the mouth is wide enough to get your hand in there to muddle well
  3. Mojito Glasses – mojitos are usually served in glasses like this and we love those, but we also love our mojitos served in stemless wine glasses especially if you aren’t using a straw.

Ingredients

FOR A PITCHER

  • 1 cup rum
  • 1 bunch mint
  • 2 limes juiced
  • 1/2 cup peach juice
  • 1/2 cup raspberry juice
  • 1 bottle prosecco or any sparkling wine you like

FOR A SINGLE COCKTAIL

  • .5 oz lime juice
  • 2 oz rum
  • 5 mint leaves or so
  • 1 oz raspberry juice
  • 1 oz peach juice
  • 4 oz prosecco

FOR FRESH RASPBERRY JUICE

  • 4 cups raspberries
  • 1 cup sugar

FOR FRESH PEACH JUICE

  • 4 cups peaches diced
  • 1 cup sugar

Instructions

MAKE THE JUICES

  • Add the raspberries and sugar to one medium pot and the peaches and sugar to another.  Cook both on medium low heat until the sugar is melted and the fruit breaks down into a sauce.   
  • Cool the mixtures slightly and then strain them.  Push some of the pulp through the strainer, but don't get too many raspberry seeds in the raspberry mixture.  Set the juice aside to cool completely

MAKE THE COCKTAIL

  • Add the rum, lime, and mint to a jug that you can reach into.  Muddle them well with a muddler or something that you can really smush the mint with to release the flavor. 
  • Add the fruit juices and the bottle of prosecco.  Pour into icy glasses and serve with a sprig of mint to make it look pretty!
