Apple and Bacon Coleslaw with Avocado Dressing

Ingredients

  • FOR THE DRESSING
  • 1 avocado
  • 1 tsp lime juice
  • 1/4 cup coconut milk
  • 3 tbsp white balsamic vinegar
  • 1 tsp prepared mustard
  • 1 tsp celery powder
  • salt and pepper to tasteFOR THE SALAD
  • 2 carrots
  • 3 green onion
  • 6 cups cabbage (we used purple and savoy)
  • 4 strips of bacon
  • 1 apple

Instructions

  • First make the dressing. Put everything in a food processor or a bowl and mix till smooth.
  • Heat a frying pan on medium heat. Cut the bacon into small pieces and fry in a pan. Remove the bacon bits and place on a paper towel lined plate.
  • Shred the cabbage into desired thickness. We like ours quite thin. Add to a large bowl.
  • Grate carrots, chop onion and add to the cabbage.
  • Cut apples into small chunks and add to bowl.
  • Add avocado dressing to cabbage mixture and stir. Top with the bacon bits and give it a little toss again.
  • Serve immediately.
