Clean your mussels. Rinse them well, debeard them by removing the membrane, check for dead ones that are slightly open and get rid of those if they don't close when you tap them against something. To find out more about this click here.
Cut the halibut or mahi mahi in to bite size pieces.
Shell the prawns, devein them and clean them well.
Chop your leeks in half and then slice them up. Chop the fennel. Wash them well to remove any dirt from between the layers.
Mince up your garlic.
Start heating a pot of water on high for your noodles. Bring the water to a boil.
At this point you should drop your noodles into the pot of boiling water. You want them to be cooked before the fish is done so the fish doesn't get over done while waiting for the noodles.
Add the clam juice, white wine, and tomatoes. Bring to boil.
Add the saffron, paprika, thyme, fish sauce and lemon.
Finally, add the mussels and then after 1 minute add the rest of the seafood. Cook for about 3-5 mins.
