Seafood Stew and Noodles

Ingredients

  • 10 scallops
  • 2 fillets halibut or mahi mahi , cut in pieces
  • 15 prawns
  • 1 lb mussels
  • 1 cup fennel , diced
  • 1 cup leeks (use the white part only)
  • 6 cloves garlic
  • 2 cups clam juice
  • 1 cup white wine
  • 1 can diced tomatoes
  • juice of 2 lemons
  • 1/2 tsp paprika
  • 1/2 tsp thyme
  • 2 tbsp fish sauce
  • 1 tbsp olive oil
  • Pinch to 1/4 tsp saffron
  • box of gluten free black bean noodles

Instructions

  • Clean your mussels. Rinse them well, debeard them by removing the membrane, check for dead ones that are slightly open and get rid of those if they don't close when you tap them against something. To find out more about this click here.
  • Cut the halibut or mahi mahi in to bite size pieces.
  • Shell the prawns, devein them and clean them well.
  • Chop your leeks in half and then slice them up. Chop the fennel. Wash them well to remove any dirt from between the layers.
  • Mince up your garlic.
  • Start heating a pot of water on high for your noodles. Bring the water to a boil.
  • Heat a soup pot on medium. Add the olive oil, fennel and leeks. Sauté for 2 mins and then add the garlic. Sauté for another 3 mins until everything is tender.
  • At this point you should drop your noodles into the pot of boiling water. You want them to be cooked before the fish is done so the fish doesn't get over done while waiting for the noodles.
  • Add the clam juice, white wine, and tomatoes. Bring to boil.
  • Add the saffron, paprika, thyme, fish sauce and lemon.
  • Finally, add the mussels and then after 1 minute add the rest of the seafood. Cook for about 3-5 mins.
