Fried Green Tomatoes with Basil and Balsamic

Ingredients

  • 2 eggs
  • 2 tbsp coconut milk (or regular milk)
  • 1 1/2 cups panko crumbs (you can get good gluten free panko and bread crumbs now)
  • 3/4 cup flour or cornstartch
  • 1/4 cup parmesan or other hard cheese , grated and chopped
  • sprinkle of dried basil and/or oregano
  • salt and pepper to taste
  • 4 or 5 green tomatoes
  • butter and oil for pan frying
  • basil chopped
  • balsamic reduction glaze
  • sea salt for finishing , we use Maldon salt

Instructions

  1. In a bowl crack the eggs and add milk and beat together.
  2. In s second bowl add the flour.
  3. In the last bowl add the panko crumbs, cheese, and seasonings.
  4. Dip each of the tomato slices in the flour first and coat evenly then into the egg mixture evenly and lastly into the panko crumb.
  5. Repeat for all the slice tomatoes.
  6. Turn a burner on to med high and in a large frying pan add butter and oil enough to get the crumbs coated nicely to brown the panko crumbs.
  7. When the tomatoes are nicely browned on one side flip and add a little more oil and butter mixture till the other side is nicely brown.
  8. When all the tomatoes are nicely browned, put on a plate and drizzle the balsamic reduction over the tomatoes, sprinkle with chopped basil and salt and pepper to taste.
  9. Serve!
