Spinach Salad with Maple Balsamic Vinaigrette

A delicious spinach salad with tomatoes, eggs, mushrooms, cheese and balsamic vinaigrette.

Ingredients

FOR THE SALAD

  • 1-2 large hard boiled eggs , cooled
  • 2 cups spinach
  • 3-4 mushrooms
  • 2 tbsp bacon bits
  • 2 tbsp red onion , sliced
  • 2 tbsp gruyere cheese , grated
  • 4 cherry tomatoes (optional)

FOR THE DRESSING

  • 2 oz balsamic vinegar
  • 2 oz olive oil
  • 1 oz maple syrup or a little less
  • 1 oz prepared Mustard
  • 1/2 tsp salt or more to taste

Instructions

  1. In a jar or container with a lid, add all the ingredients for the dressing and shake well.  Add Salt to taste.

FOR THE SALAD

  1. Cook your hard boiled eggs and set aside to cool.
  2. Place the spinach on a plate and arrange the mushrooms, tomato, onion, bacon bits and cheese on top.  Slice your cooled hardboiled egg and place on top.  Drizzle with the dressing and serve!
