Ingredients

FOR TWO SALADS

  • 6 cups spinach
  • 8 mushrooms
  • 4 strips bacon chopped and cooked, fat reserved
  • 1/2 med red onion sliced
  • 1-2 large hard boiled eggs
  • 1/2 cup gruyere cheese grated
  • 1 small tomato chopped

FOR THE DRESSING

  • 3 tbsp bacon fat
  • 2 tbsp apple cider vinegar
  • 1 tsp maple syrup or more if you like a little more sweet
  • 1 tbsp grainy mustard
  • salt and pepper to taste

Instructions

FOR THE SALAD

  1. Cook your hard boiled eggs and set aside to cool.
  2. Place the spinach on a plate and arrange the mushrooms, tomato, onion, bacon bits and cheese on top.  Slice your cooled hardboiled egg and place on top.  Drizzle with the dressing and serve!
