Add all the ingredients except 1 tbsp of the bourbon to a small or medium sauce pot. Bring to a boil and then reduce the heat and simmer for 10 mins.
Remove from the heat and let it cool slightly. Add a little more bourbon, a teaspoon at a time, until you get the flavor that you like. This is optional too, you could just leave it the way it is.
When completely cool, store in an airtight container in the fridge until you are ready to serve it.
