  • 4 cups organic rolled oats (gluten free) not quick oats
  • 1 tsp Himalayan or sea salt
  • 1/2 tsp cinnamon
  • 1/4 tsp ginger
  • 1/2 cup coconut oil
  • 1/2 cup maple syrup
  • 1 tsp vanilla
  • 1/4 c hemp hearts
  • 1/4 c chia seeds
  • 1/4 cup pumpkin seeds
  • 1/4 cup sunflower seeds
  • 1/2 c walnuts chopped in pieces
  • 1/4 c dried cherries chopped
  • 1/2 c dried apples chopped
  • 1/4 c dried apricots chopped

  • Preheat oven to 350 degrees.
  • Add the oats, salt, cinnamon, ginger, coconut oil, maple syrup, vanilla, hemp hearts and chia seeds to a large bowl.
  • Lay on a parchment paper lined tray and bake for 12 - 15 mins.
  • Remove from the oven and mix in the fruit, seeds, and nuts. I put mine in a bowl to mix.
  • Spread granola back on the sheet and bake for another 10 mins.
  • Remove from the oven, give it a mix and let it cool.
  • Store in airtight container or bag.
  • Serve with plain yogurt and drizzle with honey if desired.

The amount of fruit and the type of fruit that you put in the granola is really up to you. If you don't like fruit just don't add any. Or if you like lots, add more, it wont matter to the recipe.
