This cucumber mojito recipe is a refreshing twist on the classic mojito cocktail. It's everything you love about a mojito with an extra hint of fresh.

- 5 slices cucumber
- 2 oz rum white rum works best here
- 5-10 leaves of mint (depending on how minty u like your mojito)
- 4 oz club soda or more to taste
- 1 tsp simple syrup
- 1 tsp lime juice
In a large glass or shaker, muddle the cucumber, a little mint and rum till the cucumber is broken up quite well. Strain into a glass.
Add the rest of the mint, lime juice, and simple syrup to the glass and muddle briefly again.
Fill the glass with ice and then top with club soda. Add some sliced cucumber to the cocktail glass and garnish with a sprig of mint. Serve...
